Potato Cheddar Frittatas
- Two small red potatoes sliced in to thin strips
- One clove of garlic, smashed and sliced thin
- Half of a diced onion
- Six eggs, beaten
- Salt & Pepper
- Cayenne pepper if you like it hot
- Shredded Cheddar cheese
- Preheat oven to 350 degrees
- Heat the sliced potatoes in an oven safe skillet until brown on both sides
- Add onions and garlic after potatoes are almost completely browned. (If you add them too soon, they will burn.)
- Add eggs and let sit and cook for a few minutes
- Add some salt and pepper.
- Add a generous helping of cheddar cheese
- Put skillet in oven and cook for ten minutes
- Broil for two minutes
- Salt and pepper to taste
- Add cayenne if you prefer some spice
- Let cool for at least five minutes, cut in to slices and enjoy!
