Meat Sauce

I know, I know...it's been A LONG time.

Now that I'm pregnant I don't seem to have the energy to cook much although I'm getting better now that the first trimester is finally behind me.

One of the things I've noticed about being pregnant is that I'm craving things. Like um....meat. Red meat. It ain't easy but I'm doing my very best to ignore it. I do not want to feed myself dead flesh, especially with a new life inside me.

Anyway, one of the things I've been REALLY craving is my mom's Greek meat sauce over pasta. So I made my own version the other night and it was fantastic. I've posted a recipe for meat sauce before but I figured I'd post another one:

  • Extra virgin olive oil

  • Salt to taste

  • Cinnamon

  • 1/2 bag of Smart Ground (regular flavor)

  • Two cloves of garlic

  • 2 scallions, diced (white and green parts)

  • 2 cups of fresh mushrooms, chopped in to small pieces

  • 3 cups of tomato sauce

  • Grated Romano cheese

  • 1 cup of chopped fresh basil

  • Any kind of pasta although I used spinach fettuccine with this

  1. In a large skillet, combine mushrooms, garlic, scallions in olive oil.

  2. Add the Smart Ground, salt and tomato sauce.

  3. Add a generous amount of cinnamon. This really adds a unique flavor.

  4. Sprinkle in some Romano cheese so that the flavor will melt in to sauce.

  5. Let simmer. The longer you let this mixture sit, the more flavor the Smart Ground will absorb

  6. When ready to eat, add sauce to cooked pasta, sprinkle on some more cheese and then add some fresh basil.

The husband LOVES when I make this one!
